Winemaking
Made from grapes grown in our winemaker’s family vineyard, located in the rural area of Lecce and Brindisi in Puglia, Italy. The grapes are hand-picked, typically during the last week of August in the early morning, to retain freshness. Bunches are destemmed before a 6-hour cold maceration is carried out to extract a bright, salmon colour. Fermented at 15-16 °C and aged in stainless steel vessels.
