Winemaking
Made from grapes grown in our winemaker’s family vineyard, located in the rural area of Brindisi in Puglia, Italy. The grapes are hand-picked in the early morning to retain freshness, typically in September. They are then destemmed and fermented in stainless steel vessels at 22-24°C for 8-10 days with daily pump-overs. Malolactic conversion occurs after fermentation; the wine is then aged in oak barrels for 4 months.
