Winemaking
Made from grapes grown in our winemaker’s family vineyard, located in the rural area of Brindisi in Puglia, Italy. The grapes are hand-picked in the early morning to retain freshness, followed by 6-8 hours of skin contact to maximise the extraction of flavour and texture. Soft pressed and fermented at 16-17°C for 10-12 days. Aged on the lees for 3 months, then bottled.
